A champenois method spumante made with 100% organic Trebbiano Spoletino grapes, which stands 24 months on the lees.
Trebbiano Spoletino 100%, from massale selection of the best old Trebbiano Spoletino vines, grown according to the vine training system between maple trees.
First year of production
Situated on a hill at an altitude of 350 m a.s.l.; western exposure; Guyot training system.
Generally in the first week of September; the grapes are hand-picked.
Harvesting by hand placing bunches in small trays. Soft pressing of whole bunches. Static cold clarification and fermentation in big oak casks. Malolactic fermentation doesn’t take place.
On the lees until the “pris de mousse” for the second fermentation, and then for 24 months in the bottle with lees.
